Blueberry Muffins
1 1/4 c all-purpose flour
1 1/4 c whole wheat flour
1/2 c sugar
1 T baking powder
1/4 tsp salt
1 c milk
1/2 c butter, melted
1 egg
1 tsp vanilla extract
1 c fresh or frozen blueberries
Preheat oven to 400 degrees. Grease 12 muffin cups. In a large bowl, combine flours, sugar, baking powder, and salt. In a medium bowl, with a fork, beat milk, melted butter, egg and vanilla until blended. Add to flour mixture; stir just until moistened, batter will be lumpy. Fold in blueberries. Spoon batter into muffin pan. Bake 20-25 minutes. Immediately remove from pan. Makes 12 muffins,
